Beyond a bastardised cuisine babylon of sloppy beans, soggy enchiladas and obnoxious amounts of melted cheese lies a tastebud utopia of strawberry tamales, zucchini flower burritos, pig snout and coriander salsa tortilla, calabacitas topped with queso blanco, and peppers stuffed with minced pork, plantains, raisins and avocado leaves.
