Maxine Thompson's Kitchen Dreamland

I recently signed up to NETFLIX. It’s incredible. I have access to so many cooking shows on demand. Which means every night I crawl into bed and enter the kitchens of various famous chefs all over the world. I have become slightly addicted to Ramsey’s Kitchen Nightmares (yes cringe now if you must) but I honestly love it. And find it surprisingly, very inspirational!

The end result was might tasty- perfect with a light salad and a great little mid-week number so you can take the left over patties for pack lunch, or a really nice vegetarian BBQ burger alternative.
Salmon Cous Cous Patties ![]()
500g salmon (roughly mashed)
2 cups cooked cous cous
1/4 cup each chopped coriander & mint
1 tablespoon flour
2 eggs
salt & pepper
oil for cooking
Place all ingredients in a bowl, season with salt and pepper and bring together with your hands.
Shape patties into desired size, heat pan and fry for 3 minutes on either side or until golden. I covered the patties whilst frying to ensure the salmon cooked all the way through.
Serve with a green salad and glass of white wine.
